Healthy shamrock shake

I haven’t been a fan of shakes for a while now, ever since I was feeling confident one day at In-N-Out and got a double double (with grilled onions of course), animal-style fries, and a vanilla shake.  I ate 90% of it but felt horrible afterwards, and haven’t been able to look a shake in the eye since.

I found a healthy shamrock shake, in honor of St. Patrick, recipe here and below.

My friends and I also went to a St. Patrick’s parade downtown, which basically consisted of a bunch of people wearing green, walking and throwing necklaces. My favorite part was 1) the one Celtic dancer and 2) people-watching the crowd. See below!

Power Green Shamrock Shake
Prep time: 5 minutes
2 servings
1 bunch of kale, finely chopped
1-2 grated carrots
3 cups boiled water
1 cup coconut milk
  1. Add kale, carrot and water to a blender and puree very well, about 2 minutes.
  2. Add coconut milk and blend for 10-15 seconds more.
  3. Serve warm or place in the fridge and serve chilled.
  • Add a slice of ginger or a dash of cayenne pepper for an added kick.
