Banana nut zucchini muffin recipe = doing something meaningful

This morning I commented on a cute photo my professional photographer friend posted online, and saw more photos of what she’d been up to lately. I’ll preface this with the fact that I religiously watch The Bachelorette.  I’m not proud of that, or perhaps I am since it gives me insight into the human psyche.

Anyway, I saw a fun photo of said friend in Africa with a bunch of people, some who I knew from our church, and Emily Maynard and Jef Holm from The Bachelorette.  I commented on the photo that I’m living vicariously through her, then realized I needed to live my own life.  SO I decided to bake muffins! These will not disappoint.

I substituted 3 of the bananas for 3 cups shredded zucchini since I have them in my garden.  I also tried substituting 1 Tbs. flax seed for one of the eggs, to see if being animal-friendly was still delicious, and it is. Here is the recipe.

there are nuts on the top of some because I forgot to mix in the nuts at first. I also didn’t have any pecans/walnuts so I used almonds, which was an ok alternative.
