Gluten free vegan chocolate chip cookie dough

I make peanut butter energy balls every week to bring to work. They’re gluten-free, vegan, filling, easy to eat on the go, and you can throw one to your hungry friend, so I feel like they are the perfect snack.  I hit the snack-monotony wall this week though, so I decided to look up a new healthy snack recipe.  Vegan raw cookie dough was the finalist, and coworker reviews were favorable- these balls are their new best friend.

I doubled this recipe, but also added flax seed and a heaping tablespoon of natural Smucker’s peanut butter as well since the vanilla flavoring was a mite overpowering. It yielded around 20 balls, or spheres as I like to call them at work. (Update: My second double batch of my custom recipe I only put a tiny drop of pure homemade vanilla extract in and also added 2 Tbs of cocoa powder. Delicious.)

These will not disappoint- make some this weekend for a little happy November fall get-together!
